  • 1 handful mixed nuts (almonds, pine nuts, walnuts, black sesame seeds, etc.)
  • 2 Tbsp brown sugar
  • 1 Tbsp butter

First, prepare the nut filling for your hotteok. Feel free to use any nuts you have on hand. For extra flavor, I’m using almonds, pine nuts, walnuts, and black sesame seeds. You can also add other seeds like sunflower or pumpkin seeds for variety. Roughly chop the nuts to ensure a pleasant texture when you bite into the hotteok.

Now, let’s make the sweet filling. In a bowl, combine 2 tablespoons of brown sugar with the chopped nuts. Mix them thoroughly until the sugar evenly coats the nuts. This simple mixture will become your delicious hotteok filling.

It’s time to soften the bread slices. Place the 4 slices of bread on a plate, cover them tightly with plastic wrap, and microwave for 30 seconds. This quick step will make the bread pliable and easier to shape, preventing it from breaking. Be careful not to over-microwave, as this can make the bread tough.

Once the bread slices are warm and soft from the microwave, generously spoon the prepared nut and brown sugar filling onto one slice. Spread it evenly, making sure to cover most of the surface. Then, place another slice of bread on top to seal the filling inside.

Let’s shape our bread hotteok into a round form. Using the bottom of a round bowl or cup, gently press down on the bread slices. This action helps to compact the filling and create a neat, round hotteok. Ensure the edges are pressed firmly to prevent the filling from escaping during cooking.

Now, it’s time to get that golden-brown sear! Heat a non-stick frying pan over medium heat and add 1 tablespoon of butter. Swirl the pan to let the butter melt and coat the surface evenly. Carefully place the shaped bread hotteok into the pan.

Crucially, keep the heat on low while cooking. Reduce the flame to the lowest setting and cover the pan with a lid for about 20 seconds. This gentle heat allows the brown sugar to slowly melt and caramelize, creating a wonderfully gooey center without burning the bread. Covering helps the inside heat through.
