First, take about two handfuls of kimchi, rinse it if you prefer a milder taste, and then finely chop it into bite-sized pieces. If you want to reduce the spiciness, you can use less of the kimchi juice or omit it altogether.

Heat a pan over medium heat. Add the chopped kimchi and about one ladleful of kimchi juice. Stir-fry for about 2-3 minutes, or until the kimchi becomes translucent and wilts. Adjust the cooking time based on how well-fermented your kimchi is. If you’re using very sour kimchi, you might want to add a little more sugar.
