  • 1 roll of Gimbap (leftover)
  • 2 eggs
  • 1 drop of anchovy sauce (or a pinch of salt)

Dipping Sauces

  • Pickled Cheongyang chili peppers, to taste
  • Soy sauce, to taste
  • Ssamjang (Korean soybean paste), to taste
  • Mayonnaise, to taste

Cooking Instructions

First, prepare your gimbap. Any type of gimbap, like plain gimbap or tuna gimbap, will work perfectly. If your gimbap is very large, slicing it into bite-sized pieces (about 2cm thick) will make it easier to cook later.

Crack 2 eggs into a bowl and whisk them, removing the chalazae (the white stringy bits). You can add a tiny pinch of salt for seasoning, or for an extra flavor boost, add just one drop of anchovy sauce. Whisk everything together until well combined.

Dip the sliced gimbap pieces into the whisked egg mixture, coating both sides thoroughly. Let the gimbap sit in the egg batter for about 30 seconds to 1 minute. This allows the egg to soak into the gimbap, ensuring it fries up golden brown and holds together beautifully.

Now, heat a generous amount of cooking oil in a pan over medium-low heat. If the gimbap slices are thick, it might be challenging to cook them through. Therefore, it’s crucial to cook them slowly and gently over low heat. Pan-fry the gimbap slices until they are golden brown on both sides. Once the exterior is nicely browned, the inside will be warmed through and delicious.

Let’s make the first dipping sauce! Mix ssamjang and mayonnaise in a roughly 1:1 ratio. This creates a creamy and savory ssamjang-mayo sauce that perfectly balances the richness of the gimbap jeon and adds a delightful flavor complexity.

For the second sauce, we’ll add a touch of spicy zest. Pour a suitable amount of soy sauce into a small bowl and mix in finely chopped pickled Cheongyang chili peppers. For an extra kick and a fresher taste, you can top this sauce with freshly chopped Cheongyang chili peppers, which adds a wonderful sharp flavor.
