  • 3 large fresh onions
  • 80g fresh beet
  • 1 Tbsp pickling spice

Brine

  • 1 L water
  • 1 ½ cups sugar (approx. 200g)
  • 1 cup apple cider vinegar (approx. 200ml)
  • 2 Tbsp coarse salt

Cooking Instructions

Prepare 3 large, fresh onions. Using fresh onions is key to achieving a satisfying crunch in your pickles.

Peel and thoroughly wash the onions. Pat them dry and slice them into rounds about 0.5 cm thick. You can adjust the thickness to your preference, but aim for a consistent size for even pickling. Too thin might make them mushy, and too thick might prevent them from absorbing the brine properly.

Peel and wash the beet, then pat it dry. Slice the beet as thinly as possible into 80g portions. Using too much beet can result in an overly dark color that might overpower the natural color of the onions. Thinly sliced beets will release their beautiful color more evenly.

In a sterilized glass jar or container, layer the sliced onions and beets. Alternating them creates a visually appealing mosaic of colors.

In a saucepan, combine 1 L of water, 2 Tbsp coarse salt, 1 ½ cups of sugar, and 1 cup of apple cider vinegar. Stir well until the sugar and salt are dissolved. Feel free to adjust the sweetness or tanginess by modifying the amounts of sugar and vinegar according to your taste.

Add 1 Tbsp of pickling spice to the brine mixture. This spice blend will impart a wonderful aroma and classic pickle flavor.

Allowing it to cool completely before sealing prevents condensation inside the jar, which can make the pickles soggy.

Leave the jar at room temperature for about 1 day to allow the beet’s color to infuse into the onions, creating that beautiful pink hue. You’ll see the color gradually spreading. After the initial day, transfer the jar to the refrigerator for storage.
