Main Ingredients- 150g green parts of scallions
- 2 Tbsp scallion root infused water (Water from rinsing the green parts of scallions steeped in 2 Tbsp vinegar and cold water for 10 minutes)
- 700g sun-dried sea salt (aged to remove excess moisture)
Cooking Instructions
Step 1
First, prepare the key ingredient for making delicious scallion salt: the green parts of the scallions. Accurately measure out 150g of the green leaves from thoroughly washed scallions.
Step 2
To further refine the scallion leaves and preserve their fresh aroma, soak them in a mixture of 2 tablespoons of cold water and 2 tablespoons of vinegar for 10 minutes. Afterward, rinse them thoroughly under running water multiple times and completely drain any excess moisture.
Step 3
To make it easier for the blender to process, finely chop the prepared scallion leaves as much as possible. This ensures the ingredients blend evenly without clumping.
Step 4
Scallion roots are used to create a fragrant broth. Prepare 3 fresh, clean scallion roots.
Step 5
We’ll make a special water using the scallion roots. Pour water into a pot, add the 3 prepared scallion roots, and simmer to extract their aromatic flavor. (Tip: A light simmer can create a deeper flavor.) Strain the infused water and use only 2 tablespoons.
Step 6
Now, add the 150g of prepared scallion leaves and the 2 tablespoons of scallion root infused water to the blender.
Step 7
Blend the scallion leaves and water together. The process of it blending smoothly is already exciting!
Step 8
Let’s start blending thoroughly. Using a high-speed blender, especially, will grind the ingredients very finely, allowing you to create a smooth salt without any chunks.
Step 9
Now it’s time to prepare the salt. Use 700g of sun-dried sea salt that has been well-aged to remove its natural moisture. Good salt is the foundation of any great dish!
Step 10
Gently rinse the sun-dried sea salt. If the salt soaks in water for too long, it can dissolve, so it’s important to rinse it quickly under running water and immediately drain any excess moisture.
Step 11
Place the rinsed sun-dried sea salt in a sieve and let it drain for 30 minutes to thoroughly remove any remaining water. This ensures the salt fries well without clumping.
Step 12
We recommend using a cast-iron pan for frying the salt. Cast-iron pans are excellent at retaining heat, maintaining a consistent temperature that helps evaporate the salt’s moisture more effectively. This creates the ideal environment for frying.
Step 13
Now for the crucial frying step. Add the 700g of drained sun-dried sea salt and the finely blended scallions to the cast-iron pan. Fry over medium heat for about 30 minutes. Stir continuously to prevent burning.
Step 14
While frying, keep stirring with a spatula to ensure the blended scallions are evenly mixed with the salt. This process allows the scallion flavor to permeate every single salt grain.
Step 15
As you fry, the color of the salt becomes increasingly beautiful. The green from the scallions combines with the white of the salt, creating a refined hue.
Step 16
It’s done when all the moisture has evaporated and the salt becomes fluffy. You can see the perfectly fried scallion salt without clumps.
Step 17
This finished scallion salt is a special salt that enhances the refreshing and deep flavor characteristic of kimchi while reducing saltiness, making it a healthier option to enjoy.
Step 18
Heat control is very important during the frying process. Frying over high heat can burn the scallions or cause the salt to clump, so it’s best to maintain medium heat and fry gently.
