Main Ingredients- 4 Potatoes
- 1 Large Sweet Potato
- 4 Tbsp Potato Starch
Filling & Seasoning- 1 cup Water

Cooking Instructions
Step 1
First, thoroughly wash and peel the potatoes. Slice them thinly and place them in a microwave-safe container. Microwave for about 7 minutes until the potatoes are tender. They are ready when a fork easily pierces them.

Wash and peel the sweet potato. Dice it into small pieces, similar in size to the potato slices. Place in a microwave-safe container, cover with plastic wrap, and microwave for about 10 minutes until cooked. Adjust the cooking time based on the type and size of your sweet potato.
Step 3
While still hot, transfer the cooked potatoes and sweet potatoes from the microwave into a bowl and mash them. Using a fork or a masher makes this process easier. Add 4 tablespoons of potato starch to the mashed mixture. Knead and mix until a dough forms, similar to an ‘ikbanjuk’ (cooked dough). Mashing while hot helps the starch mix well and creates a chewy texture.
Step 4
Knead the dough until it is smooth and soft, and no longer sticks to your hands. If the dough is too sticky, add a little more potato starch. If it’s too stiff, add a tiny bit of water to achieve the right consistency.

Divide the dough into bite-sized portions (about 30-40g each) and roll them into balls. Press your thumb into the center to create a hollow. Fill this hollow generously with cheese powder. (Using mozzarella cheese will give you that satisfying stretchy texture.)

Carefully seal the dough around the cheese to close it completely. Then, fill the center of the dough ball with brown sugar and carefully seal the dough again to shape it. It’s crucial to seal the edges well to prevent the filling from leaking out.

Once all the filling is enclosed and the dough is securely sealed, shape it into a round, flat hotteok. The key is to fill it well without the dough tearing and to form it into an attractive shape.
Step 8
Preheat a stainless steel frying pan over medium-low heat and add a generous amount of cooking oil. Place the shaped hotteoks in the pan and cook them until golden brown on both sides. Be mindful of the heat; cooking over high heat can burn the outside while leaving the inside undercooked.
