Ingredients- 2 Potatoes (approx. 200g)
- 50g Jambon
- 20g Onion
- Chicory, a small amount
- Cream cheese, as needed
- 10g Butter
- Vegetable oil, a little
- Horseradish, a little
Cooking Instructions
Step 1
Wash 2 potatoes (about 200g) thoroughly. Slice them into approximately 5mm thick rounds, keeping the skin on. Soak the sliced potatoes in cold water for about 5 minutes to remove excess starch; this step enhances their crispy texture.
Step 2
Finely julienne the onion using a mandoline or knife. Prepare the jambon by tearing or slicing it into bite-sized pieces. Wash the chicory and pat it dry.
Step 3
Heat a non-stick pan over medium heat. Add the butter and a little vegetable oil. Place the potato slices in the pan and cook until golden brown and slightly crispy on both sides.
Step 4
Once the surfaces of the potatoes are nicely browned, reduce the heat to low. Cover the pan with a lid and let the potatoes steam gently until they are completely tender and cooked through. This ensures a soft interior.
Step 5
Transfer the cooked potato slices to a wire rack or a plate lined with paper towels to drain any excess oil. Allow them to cool slightly. Once warm to the touch, spread a generous layer of cream cheese onto each potato slice.
Step 6
Arrange the finely julienned onions neatly over the cream cheese layer on each potato base.
Step 7
Tear or slice the jambon into appropriate sizes and artfully place it on top of the onions. The savory, slightly salty flavor of the jambon complements the potato and cream cheese beautifully.

Finally, add a small piece of fresh chicory on top to complete each canapé. If using larger chicory leaves, tear them into smaller pieces to ensure the canapés are bite-sized and easy to eat.

Add a small dollop or a light drizzle of horseradish on top of each canapé. The piquant horseradish provides a wonderful counterpoint to the other flavors. Arrange the finished canapés on a beautiful serving platter and enjoy!
