Main Ingredients

  • Pork ribs 600g
  • Garlic 10 cloves
  • Celery 1 stalk
  • Carrot 1/2
  • Potato 1
  • Onion 1/2

Cooking Instructions

Step 1

Soak the pork ribs (600g) in cold water for about 30 minutes to 1 hour to remove any blood. Properly draining the blood is key to a clean and delicious flavor without any gamey smell.

Bring a pot of water to a boil and add 2 tablespoons of sake (or cooking wine). Add the soaked pork ribs and blanch for 1-2 minutes. Then, rinse them thoroughly under cold water. This step helps remove impurities and makes the ribs more tender.

Crush 3 cloves of garlic using the side of a knife. Peel and chop the carrot and potato into bite-sized pieces. It’s best to keep them relatively large so they don’t break down too much during cooking.

Finely chop half an onion. If you prefer a chunkier texture, you can chop it coarsely; if you like it smoother, chop it even finer.

Lightly oil a heavy-bottomed pot (a Dutch oven is recommended). Add the blanched pork ribs and sear them over medium heat until they are lightly browned on the outside. This searing step locks in the juices, ensuring a more succulent stew.

Once the ribs are browned, add the crushed garlic (3 cloves), chopped onion, diced carrot and potato, 4 bird’s eye chilies, and 1 stalk of celery to the pot. Sauté everything until the vegetables are slightly softened and fragrant. The natural sweetness and aroma from the vegetables will enhance the stew’s flavor.

Now, pour in 1.5 cups of whole peeled tomatoes, 1 cup of rib sauce, and 1 cup of water. Stir well to combine. Bring the stew to a boil over high heat, then reduce the heat to low, cover the pot, and let it simmer gently for at least 30 minutes. Continue simmering until the pork ribs are tender and the sauce has thickened slightly.

While the stew is simmering, heat a generous amount of vegetable oil in a small pan. Add the remaining 7 whole garlic cloves and cook them slowly over low heat until they are golden brown and fragrant. This infused oil will add a lovely nutty flavor to the stew.

When the pork rib stew is cooked to your desired tenderness and consistency, turn off the heat. Arrange the golden-brown whole garlic cloves on top of the stew. Sprinkle 1/2 cup of grated Parmesan cheese evenly over the top. Cover the pot and let it sit for a few minutes to allow the cheese to melt slightly, enhancing the overall richness.
