Recipe Info

  • Category : Stew
  • Ingredient Category : Pork
  • Occasion : Everyday
  • Cooking : Boil / Simmer
  • Servings : 5 servings
  • Cooking Time : Within 30 minutes
  • Difficulty : Beginner

Main Ingredients

  • 3 slices of pork neck (using thicker cuts will make it even tastier)
  • 1 handful of well-fermented ripe kimchi (the sourness of the kimchi adds depth to the stew)
  • 1 ladleful of kimchi brine (adds umami from the kimchi seasoning)
  • Korean glass noodles (dangmyeon), as needed (optional, add for a chewy texture)

Seasoning & Additional Ingredients

  • 2 Tbsp fish sauce (anchovy or sand lance), or adjust to taste based on kimchi’s saltiness
  • 1/2 Tbsp minced garlic (using freshly minced garlic will enhance the aroma)

Cooking Instructions

Step 1

First, prepare 3 slices of pork neck, the key ingredient for delicious kimchi stew. Using thicker cuts of pork neck will provide a satisfying chew and a richer flavor.

Step 1

Step 2

Cut the prepared pork neck into bite-sized pieces. Using kitchen scissors makes cutting neat and quick. Aim for pieces about 2-3 cm in size.

Step 2

Step 3

Place the cut pork neck and an appropriate amount of water in a pot. Add 2 tablespoons of fish sauce to enhance the stew’s umami. (Both anchovy and sand lance fish sauce can be used.)

Step 3

Step 4

Once the water begins to boil, use a spoon to skim off any impurities or foam that rise to the surface from the pork. This step will result in a clearer and cleaner broth.

Step 4

Step 5

After removing impurities, reduce the heat to medium and simmer for about 10 minutes, allowing the pork to cook thoroughly. This initial cooking step tenderizes the meat and infuses the broth with pork flavor.

Step 5

Step 6

Now it’s time to add the kimchi’s deliciousness! Add the well-fermented kimchi, cut into manageable pieces, along with 1 ladleful of kimchi brine, and simmer for another 10 minutes. The kimchi’s seasoning and brine will meld to create a deep flavor.

Step 6

Step 7

As the kimchi cooks, the broth might reduce. If it seems too thick, add a little more water to reach your desired consistency.

Step 7

Step 8

Once the broth has developed a rich flavor, add the pre-soaked glass noodles and 1/2 tablespoon of minced garlic. Simmer for an additional 3-5 minutes until the glass noodles are cooked. (You can omit the glass noodles if you prefer.)

Step 8

Step 9

Your delicious Pork Neck Kimchi Stew is ready! Serve generously over a bowl of hot rice and enjoy. You’ll be reaching for a second bowl in no time!
