  • 1/4 head Aged Kimchi (fermented napa cabbage kimchi)
  • 700g Pork Neck
  • 1 block Firm Tofu (approx. 300g)
  • 500ml Anchovy Broth (or water)
  • 1 ladle Kimchi Juice (approx. 1/2 cup)
  • 2 Tbsp Gochugaru (Korean chili flakes, fine grind)
  • 1 Tbsp Gukganjang (Korean soup soy sauce)
  • 1/2 stalk Scallion (green onion)
  • Generous pinch of Black Pepper

Cooking Instructions

Step 1

First, prepare 700g of pork neck. Cut the thicker parts of the meat in half; this helps the seasoning penetrate better and makes it easier to cook.

Gently shake off excess seasoning from a leaf of aged kimchi and spread it out. Place a piece of prepared pork neck onto the kimchi leaf. The tanginess of the kimchi perfectly balances the richness of the pork.

Carefully pull the kimchi taut and roll it up tightly, ensuring the pork neck stays securely inside. Rolling it tightly helps maintain its shape during cooking and prevents the pork from unraveling.

Arrange the tightly rolled kimchi and pork rolls snugly in the bottom of a pot. Packing them closely together helps them keep their shape as they cook and preserves their juices.

Cut the 300g block of firm tofu into large pieces and place them in any available spaces between the kimchi rolls. Tofu adds a wonderful tenderness and satisfying texture to the stew. While optional, it makes the dish more substantial.

Now it’s time to add the liquids. Pour in 1 ladle of well-fermented kimchi juice and 500ml of anchovy broth (or water). Bring the pot to a boil over high heat.

Once the stew begins to boil vigorously, add 2 Tbsp of fine gochugaru for a richer, spicier flavor, and 1 Tbsp of gukganjang to enhance the umami. Stir gently to combine the seasonings.

Reduce the heat to medium-low, cover the pot with a lid, and let it simmer gently for about 30 minutes. This slow cooking process ensures the pork neck becomes tender and allows the flavors of the kimchi to fully infuse the stew. If the broth reduces too much, add a little more water or broth.

Check if the pork neck is fully cooked and the stew is seasoned to your liking. Finally, add 1/2 scallion, thinly sliced diagonally, for a fresh, slightly sharp flavor. If needed, adjust the seasoning with more gukganjang. (Note: Kimchi is naturally salty, so taste and adjust accordingly.)
