Today, I made soybean sprout rice with pork belly. Instead of cooking soybean sprout rice from scratch, I made a simple version using instant rice. Main Ingredients

  • Pork belly 200g
  • Soybean sprouts 120g
  • Instant rice 1 serving (e.g., Hetbahn or your favorite brand)
  • Green onion 1/4 stalk
  • Green chili pepper 1
  • Minced garlic 1 Tbsp

Sauce

  • Soy sauce 3 Tbsp
  • Red pepper flakes 1/2 Tbsp
  • Sugar 1/2 Tbsp
  • Oligosaccharide 1 Tbsp (for shine)
  • Sesame oil 1 Tbsp
  • Sesame seeds, a pinch
  • Minced green onion (reserved from above)
  • Minced green chili pepper (reserved from above)

Cooking Instructions

Step 1

First, let’s prepare the green onion and green chili pepper that will add flavor to our delicious pork belly soybean sprout rice. Wash the green onion and green chili pepper thoroughly and mince them finely. About 1/3 of these minced vegetables will go into the sauce we’ll make soon, and the remaining 2/3 will be stir-fried with the pork belly for a richer flavor.

Now, let’s make the fragrant and tasty sauce. In a bowl, combine 3 Tbsp soy sauce, 1/2 Tbsp red pepper flakes, 1/2 Tbsp sugar, and 1 Tbsp oligosaccharide for sweetness and shine. Add 1 Tbsp sesame oil for a nutty aroma and a pinch of sesame seeds. Finally, add the finely minced green onion and green chili pepper that you set aside earlier. Mix everything thoroughly and gently until well combined. Your delicious sauce is ready!

It’s time to prepare the crunchy soybean sprouts. Rinse the soybean sprouts thoroughly under running water. Place the soybean sprouts in a steamer or pot. Sprinkle a tiny pinch of salt to remove any unpleasant smell characteristic of soybean sprouts. Cover tightly and steam over high heat for about 7 minutes. Be careful not to overcook them, as they can become mushy. Steaming them until they are crisp-tender is key.

Now, let’s cook the pork belly to perfection! Heat a frying pan and add 200g of pork belly. Add 1 Tbsp of minced garlic and begin to stir-fry. Cooking the pork belly over medium heat allows it to render its fat nicely, resulting in a more delicious flavor. Season with a little salt and pepper while it cooks to enhance the taste. Grill until both sides of the pork belly are golden brown and crispy.

Once the pork belly is nicely browned, reduce the heat slightly. Add the reserved minced green onion and green chili pepper to the pan and stir-fry together with the pork belly. Stir-frying the vegetables with the pork belly cuts through the richness and adds a delightful aroma and umami, making it even more flavorful. Sauté just until the vegetables are slightly softened.

And finally, it’s complete! Place the warm instant rice into a bowl. Generously top it with the steaming soybean sprouts and the perfectly browned pork belly. Drizzle the prepared sauce over everything and mix well to enjoy your magnificent pork belly soybean sprout rice! You can also add shredded seaweed or a fried egg for an extra touch of flavor.
