First, wash the scallions thoroughly under running water and remove any dirty outer leaves. Then, cut each scallion in half lengthwise, separating the white and green parts. (Cutting them too short might make rolling difficult.)

Now, lay out the thinly sliced pork belly pieces neatly over the prepared scallions. Starting from one end of the scallion, tightly wrap the pork belly around it, rolling it up securely. Ensure the pork belly is wrapped snugly along the length of the scallion. (If using bacon, you can wrap it together with the pork belly for an extra layer of flavor.)

Sprinkle a pinch of sea salt and freshly ground black pepper over the outside of the rolled scallions and pork belly to season them lightly. This step enhances the overall flavor of the pork belly.
