Cooking Instructions

Step 1

Let’s start preparing the ingredients for a delicious Pork and Zucchini Stew!

Step 2

First, cut the pork into bite-sized pieces. If you’re using a larger cut of pork, gently pat it dry with paper towels to remove excess blood. This step is crucial for a clean and odor-free stew.

Step 3

In a bowl, combine all the seasoning ingredients (gochugaru, cheongju/cooking wine, anchovy powder, shiitake mushroom powder, maesil cheong, gochujang, fish sauce/soy sauce, doenjang). Add the prepared pork and mix well by gently massaging it with your hands. Marinating the pork beforehand will infuse it with deep flavors.

Step 4

Time to chop the vegetables! Thinly slice the onion, and cut the zucchini and potato into half-moon shapes. Slice the green onion, red chilies, and green chilies diagonally into large pieces. Adjust the amount of chilies based on your preference for spiciness.

Step 5

Now, let’s get cooking! Heat 2 tablespoons of sesame oil in a pot over medium heat. Add the marinated pork and stir-fry until the surface turns golden brown. Sautéing the pork well enhances its flavor and aroma.

Step 6

Once the pork is browned, pour in 600ml of water and bring it to a boil over high heat. As soon as it starts bubbling vigorously, reduce the heat to medium.

Step 7

When the stew comes to a rolling boil, add the potatoes and onions first, as they take longer to cook. Simmer for about 5-7 minutes until the potatoes are halfway tender.

Step 8

Once the potatoes are partially cooked, add the zucchini, chilies, and 1 tablespoon of minced garlic. Lower the heat to medium-low and let it simmer gently, allowing the flavors of the ingredients to meld. Be careful not to overcook the zucchini, keeping it slightly firm.

Step 9

Taste and adjust the seasoning! If the stew is not salty enough, add a little more fish sauce or soy sauce. If you prefer it sweeter, a touch of sugar or maesil cheong can be added. Finally, add the sliced green onions and simmer for another minute to bring everything together. Your delicious stew is almost ready!

Step 10

Your flavorful Pork and Zucchini Stew is complete! Enjoy this hearty and delicious meal with a bowl of hot rice!
