Main Ingredients

  • 3 medium-sized potatoes
  • 200g ground pork (or finely chopped pork belly/shoulder)
  • 1 small onion
  • 1 large green onion
  • 2 Korean chili peppers (Cheongyang peppers)

Seasoning

  • 1 Tbsp minced garlic
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 tsp gochujang (Korean chili paste)
  • 2 Tbsp soup soy sauce (or fish sauce)
  • 1 tsp sugar (adjust to taste)
  • 1 Tbsp olive oil (or cooking oil)
  • A pinch of black pepper

Cooking Instructions

Step 1

First, prepare all your vegetables. Wash the potatoes thoroughly and cut them into bite-sized cubes. Rinse them once or twice in cold water and drain. Slice the onion thinly, and thinly slice the green onion and Korean chili peppers diagonally. I’m using ground pork for convenience, but you can also use finely chopped pork belly or shoulder for a richer flavor.

Heat a pot over medium-high heat. Add the ground pork, minced garlic, gochugaru, black pepper, sliced green onion (reserve some for garnish if you like), and olive oil. Stir-fry until the pork is cooked through and slightly browned. Then, add the cubed potatoes and stir-fry for another 2-3 minutes, allowing them to get lightly coated in the oil.

Pour in enough broth or water to just cover the potatoes. Dissolve 1 teaspoon of gochujang in a small amount of water and stir it into the pot. Bring the stew to a rolling boil over high heat for about 7-8 minutes, until the potatoes begin to soften.

Once the potatoes start to soften, add the sliced onion and Korean chili peppers. Season with 2 tablespoons of soup soy sauce for basic saltiness. For a touch of sweetness and to enhance the flavors, add 1 teaspoon of sugar. You can adjust the sugar to your preference. Taste and add more soy sauce or a pinch of salt if needed.

Continue to simmer the stew for another 10 minutes, either covered or uncovered, allowing all the flavors to meld together. Ensure the potatoes are fork-tender and the stew has thickened slightly. Stir occasionally to prevent sticking.
