- Pork (pork neck or belly recommended) 125g
- Water 200ml

Cooking Instructions
Step 1
The key to a delicious kimchi stew is the pork! Prepare about 125g per serving of pork neck or belly, which has a good balance of fat. Slicing the pork into small, bite-sized pieces will help the flavors meld evenly and improve the texture. Trim off any excess skin.
Step 2
In your rice cooker pot, add the prepared pork, 1 tsp of garlic powder (or minced garlic), 1/3 tsp of salted shrimp, and the 30g of sliced onion. This initial step helps to build the flavor base.
Step 3
Boil 200ml of water in a separate pot or kettle. Once boiling, pour the hot water into the rice cooker pot. (For Cuckoo rice cooker) Select the ‘Reheat’ function and set it for 9 minutes. This process helps to extract the rich flavors from the pork.
Step 4
While the rice cooker is reheating, thinly slice 150g of aged kimchi. The characteristic tanginess of aged kimchi is essential for a deep and satisfying stew flavor.

After the first reheat cycle is complete, add the sliced 150g of aged kimchi, 1 Tbsp of dried anchovy powder, 0.5 tsp of MSG (or umami seasoning), and 1 tsp of sugar to the rice cooker. Stir everything well to combine, then set the ‘Reheat’ function again for another 9 minutes. This allows the flavors to meld beautifully.
Step 6
Finally, add the sliced scallions and give it one last stir. Your delicious pork kimchi stew is ready to be enjoyed! Serve directly from the rice cooker with a bowl of warm rice. For extra flavor, you can also add chili peppers or tofu to your liking.
