Main Ingredients

  • 1 eggplant (medium size)
  • 2/3 cup ground pork (approx. 100g)
  • 1 stalk green onion (white part mainly)
  • 3 cloves garlic
  • 1/3 onion
  • 1 Korean chili pepper (optional, for added spiciness)

Sauce

  • 2 Tbsp soy sauce
  • 1.5 Tbsp oyster sauce
  • 1.5 Tbsp sugar
  • 1 tsp minced garlic
  • 1 tsp ginger powder (or 1/2 tsp minced ginger)
  • 2/3 cup water (approx. 130ml)

Cooking Instructions

First, prepare all your ingredients. Cut the eggplant into 5cm lengths and then quarter them, or cut into bite-sized pieces. Finely chop the white part of the green onion. Slice the garlic thinly and shred the onion. If using the Korean chili pepper, remove the seeds and finely chop it.

Heat a pan over high heat. Add the ground pork, chopped green onion whites, and sliced garlic. Stir-fry until the pork is browned and cooked through. The fat rendered from the pork will help cook the vegetables and add flavor.

Once the pork is almost cooked, add the eggplant, onion, and Korean chili pepper (if using). Stir-fry over high heat for 1-2 minutes. You want to lightly cook the vegetables so they retain a pleasant crispness and vibrant color.

In a small bowl, whisk together the soy sauce, oyster sauce, sugar, minced garlic, ginger powder, and water to make the sauce. Pour this sauce into the pan. Reduce the heat to medium-high and stir-fry for another 2-3 minutes, allowing the sauce to thicken and coat the ingredients evenly. Make sure to stir occasionally to prevent the sauce from burning.

Turn off the heat. Drizzle in the sesame oil and toss everything together to combine. The aroma of sesame oil will enhance the overall flavor profile.
