Main Ingredients
  • 3-4 Eggs
  • 1/2 Carrot
  • 1/2 Cucumber
  • 1 sheet Gimbap seaweed

Seasoning & Others
  • 1 Tbsp Sugar (for egg mixture)
  • Pinch of Salt (for stir-frying carrots)
  • Pinch of Sugar (for stir-frying carrots)

Cooking Instructions

Step 1

First, crack the 3-4 eggs into a bowl, ensuring both the whites and yolks are mixed thoroughly. For a touch of sweetness and a softer texture, you can add 1 tablespoon of sugar to the egg mixture. Lightly oil a frying pan and pour the egg mixture thinly to create an omelet. Cook until golden brown on both sides. Once cooled slightly, slice the omelet into long strips for your gimbap filling.

Step 2

Wash and peel the carrot and cucumber, then julienne them into thin strips. Heat a little oil in a pan over medium-low heat. Add the julienned carrots and stir-fry. Once the carrots begin to soften slightly, add a pinch of salt and a pinch of sugar. Continue to stir-fry until the carrots are tender and slightly sweetened. This brings out their natural sweetness and makes them blend well into the gimbap. The cucumber can be used raw for crunch or lightly sautéed.

Step 3

Cut the prepared egg omelets into long, approximately 1cm wide strips. Place one sheet of gimbap seaweed on a bamboo rolling mat, shiny side down. Arrange the sliced egg omelet strips evenly across the seaweed, covering it as much as possible. Ensure the egg covers the entire surface for a substantial filling.

Step 4

Next, lay the julienned carrots and cucumber strips neatly side-by-side on top of the egg omelet. Now, using the bamboo mat, carefully roll the gimbap tightly. Lift the edge of the mat closest to you and fold it over the fillings, then continue to roll forward, applying gentle pressure to keep the roll firm. If the seaweed isn’t sticking well, you can lightly mash some cooked rice grains and spread them along the edge to act as an adhesive, sealing the roll securely. Once rolled, slice the gimbap into bite-sized pieces and enjoy your delicious Keto Gimbap!
