Ingredients

  • 2 pieces of pollack roe
  • 2 bowls of cooked rice
  • 2 eggs
  • 2 handfuls of chopped green onion
  • 1 pinch of salt
  • 1 Tbsp minced garlic
  • Plenty of cooking oil
  • A little sesame oil

Cooking Instructions

Finely chop the green onions. This will be used to create a fragrant base for the fried rice.

In a bowl, crack 2 eggs and add a pinch of salt. Whisk them thoroughly until well combined. This ensures the eggs will cook into soft, fluffy curds.

Prepare the pollack roe. Gently scrape the roe out of the casings using the back of a knife. Discard the casings as they can be tough.

Heat a generous amount of cooking oil in a pan over medium heat. Add the chopped green onions and minced garlic. Sauté until fragrant and the green onions are slightly softened, creating a flavorful green onion oil. Be careful not to burn the garlic.

Once the green onion oil is fragrant, push the aromatics to one side of the pan. Pour the whisked eggs into the empty space and scramble them until just set. This adds a lovely texture to the fried rice.

Add the two bowls of cooked rice to the pan along with the scraped pollack roe. Break up any clumps of rice with your spatula.

Increase the heat to high and stir-fry everything together vigorously. Ensure the rice, eggs, and pollack roe are evenly distributed and the rice grains are slightly toasted. Keep stirring to prevent sticking.
