For Stir-fried Kimchi
  • 1/2 head of aged kimchi

Cooking Instructions

Step 1

First, prepare the delicious stir-fried kimchi, which is the core filling for your pocket gimbap. Making a generous batch of stir-fried kimchi is also great because it can serve as a wonderful side dish. Thoroughly remove the insides of the aged kimchi and chop it very finely.

Step 2

To mince the kimchi more easily, first make several cuts along the length of the kimchi, then chop it crosswise. This method makes it easier to achieve a fine mince.

Step 3

Lightly oil a heated pan and stir-fry the minced kimchi.

Step 4

While the kimchi is stir-frying, season it with complementary flavors. Add 1 tablespoon of sugar, 0.5 tablespoon of soy sauce, and 0.5 tablespoon of plum syrup, and stir-fry until the kimchi softens.

Step 5

Once the kimchi is well stir-fried, finish by drizzling 1 round of oligosaccharide and 1 round of sesame oil, then sprinkle with sesame seeds for a nutty aroma.

The stir-fried kimchi prepared this way is already a delicious side dish that pairs perfectly with rice.

I often use this pre-made stir-fried kimchi to make kimchi fried rice or, as today, as a filling for gimbap. Let’s now use this stir-fried kimchi to make pocket gimbap!

Slice the Spam into convenient pieces for gimbap. First, slice it lengthwise.

Grill the Spam until golden brown in a frying pan. While the Spam is cooking, fry an egg alongside it. You can cook the egg to your preference, either sunny-side up or fully cooked.

Meanwhile, season the rice that will be used for the pocket gimbap. For this recipe, we used about one and a half bowls of cooked rice for two gimbaps.

Step 11

Sprinkle a little salt on the rice, add sesame oil and sesame seeds. Gently mix the rice with a spatula, as if cutting it, to ensure the seasoning is evenly distributed without mashing the grains. Since ingredients like Spam and stir-fried kimchi are already seasoned, it’s best not to make the rice too salty.

Now, all the preparations for making pocket gimbap are complete!

Cut the gimbap seaweed sheets in half lengthwise. This will create convenient sizes for wrapping the gimbap.

To create the pocket shape, overlap the two cut seaweed pieces in an ‘O’ formation. Place a portion of seasoned rice on the horizontally cut seaweed, then cover it with the vertically cut seaweed.

Step 15

Spread the rice evenly and thinly over the vertically placed seaweed. Be careful not to make the rice layer too thick, as it might cause the gimbap to break.

Step 16

Arrange the fillings on top of the spread rice in the following order: grilled Spam, prepared stir-fried kimchi, and fried egg. Feel free to adjust or add other fillings according to your preference.

Step 17

When adding the stir-fried kimchi, avoid placing it too close to the edges to prevent spillage. It’s recommended to fill only about 2/3 of the way to avoid the seaweed from tearing.

Now, lift the horizontally cut seaweed and carefully wrap it around the fillings, ensuring the rice holds everything together snugly.

Finally, cover the entire roll with the vertically cut seaweed to complete your delicious pocket gimbap!
