Cooking Instructions

Step 1

First, prepare the 20 plump shrimp. Clean them thoroughly, then gently toss them with a pinch of salt, a pinch of black pepper, and 1 tablespoon of cooking wine. This marination helps to remove any fishy odor and enhances their flavor.

Next, prepare the aromatics for the filling. Finely chop the rinsed chives. Finely chop the scallions, keeping the white and green parts separate if you prefer. The white parts offer a pungent aroma, while the green parts add freshness and color.

Now, let’s season the filling. In a large bowl, combine the ground pork, chopped chives, and chopped scallions. Add 1 tablespoon of soy sauce, 1 tablespoon of cooking wine, 1 tablespoon of sesame oil, and 3 tablespoons of cooking oil. The addition of cooking oil helps to keep the filling moist.

Add a pinch of black pepper and a pinch of minced ginger (or ginger powder). Mix everything thoroughly by hand for about 3-4 minutes, until the mixture becomes cohesive and slightly sticky. This ensures the filling is well-seasoned and has a good texture.

We’re making the dumpling wrappers from scratch! In a bowl, combine 200g of all-purpose flour with 1 teaspoon of salt. Gradually add about 1/4 cup (40-50ml) of lukewarm water while mixing until a dough forms. Once it comes together, wrap it tightly in plastic wrap and let it rest at room temperature for about 20 minutes. This resting period makes the dough more pliable and easier to roll.
