Main Ingredients
- 20 peeled and deveined shrimp
- 1 pack cooked cockle meat (or 100g fresh cockles)
- 2 servings udon noodles (2 packs)
- 1 green chili pepper
- 1 red chili pepper
- 1 Tbsp minced garlic
- 1/2 medium onion
- 1 stalk green onion
- 1/4 carrot
- A little cooking oil
Seasoning Ingredients
- 4 Tbsp oyster sauce
- A pinch of salt
- 4 Tbsp oyster sauce
- A pinch of salt
Cooking Instructions
Step 1
First, wash and prepare all the fresh vegetables you have in the refrigerator. Slice the onion thinly, and diagonally slice the green onion. Finely chop or thinly slice the carrot and chili peppers (green and red) for a better presentation and easier eating. Feel free to add other vegetables according to your preference!
Step 2
Heat a generous amount of cooking oil in a pan. Add the diagonally sliced green onion and thinly sliced onion, and stir-fry until fragrant. Once the onions become translucent and release their sweet aroma, they are ready for the next ingredients.
Step 3
Add the prepared plump shrimp and cockle meat to the pan and stir-fry together. The shrimp will turn reddish as they cook, and the cockle meat should be heated through. The savory flavor of the seafood will begin to meld with the onion and green onion.
Step 4
Now it’s time to add the remaining vegetables. Add the sliced carrot, minced garlic, and the green and red chili peppers. Stir-fry to combine all the ingredients well. Minced garlic adds a fragrant aroma, and the chili peppers contribute spiciness and color.
Step 5
Briefly blanch the udon noodles in boiling water for about 1 minute, then rinse them under cold water. Be careful not to overcook them, as they can become mushy when stir-fried. Add the blanched udon noodles to the pan and quickly stir-fry with the seafood and vegetables. Toss well to ensure the noodles are coated with the sauce.
Step 6
Finally, add the key flavor enhancer, 4 tablespoons of oyster sauce, and stir-fry to distribute it evenly. Oyster sauce itself provides ample umami and sweetness, but you can adjust the seasoning with a pinch of salt to your preference for a perfectly balanced taste.
Step 7
Once everything is well stir-fried, transfer the Shrimp and Vegetable Udon Stir-fry to a serving dish. Enjoy this wonderful meal while it’s warm to savor the chewy noodles and abundant ingredients. Enjoy your meal!
