Cake Base Ingredients

  • Coconut slices 10g
  • Dried dates 15g
  • Water 1 Tablespoon

Cooking Instructions

Step 1

Let’s start by preparing the crunchy base for our cake. In a blender, combine the oatmeal, coconut slices, dried dates, and 1 tablespoon of water. Blend until you achieve a fine, crumbly mixture, similar to coarse flour.

Step 2

Transfer the blended mixture into a pie dish or your desired cake mold. Press it down firmly and evenly to create a thin, compact layer at the bottom. This will form the base of your cake, so make sure it’s well-compacted.

Step 3

Now, let’s create the smooth and creamy filling. In the blender, add 100ml of Viko Coconut Milk Premium, 30g of almonds that have been soaked in water until soft (for at least half a day), 10g of lemon juice for a touch of tartness, and 10g of maple syrup for sweetness. Blend everything until you have a very smooth and thick cream.

Step 4

Take the 60g of fresh plums, remove the pits, and finely chop them. These will be incorporated into the cake filling or used as a topping. Chopping them small ensures they blend well with the cake.

Arrange the chopped plum pieces evenly over the prepared base in the cake mold. The freshness of the plums will add a delightful fruity note to the cake.

Gently pour the creamy coconut milk mixture you prepared earlier over the plums. Ensure it covers the plums evenly and creates a smooth layer on top.

Now, it’s time to set the cake. Place the mold in the freezer for at least 4 hours, or until the cake is completely firm and set. This chilling time is crucial for achieving clean slices and maintaining the cake’s shape.
