Made with plenty of pineapple bought for making pineapple vinegar, this Pineapple Shrimp Fried Rice is a simple yet flavorful one-bowl meal, enhanced with succulent shrimp. It’s a perfect, nutritious, and tasty meal for your children during exam periods. This delightful dish is a wonderful twist on fried rice, offering a sweet and tangy flavor, and is made using leftover vegetables from your refrigerator.

Ingredients

  • 1 bowl of warm cooked rice
  • 1 handful of cocktail shrimp (approx. 50g)
  • 1/4 piece of fresh pineapple
  • 1/2 handful of chives (approx. 20g)
  • 1/2 cucumber (or zucchini or bell pepper as alternatives)
  • 1/4 onion
  • 5-7 cloves garlic
  • 1 tablespoon curry powder
  • 1 tablespoon oyster sauce
  • Pinch of black pepper
  • Pinch of toasted sesame seeds
  • Salt to taste (for seasoning adjustment)

Cooking Instructions

First, let’s prepare the vegetables and fruit. Dice the pineapple into bite-sized cubes, about 1cm in size. Wash and chop the chives into 1.5cm lengths. Thinly slice the garlic cloves. For the cucumber, remove the seeds and julienne it into 0.5cm thick strips, then finely chop the onion similarly. Feel free to substitute the cucumber with zucchini, bell pepper, or paprika for added flavor and color. Using up any leftover vegetables from your fridge will make this dish even better!

Now, let’s start stir-frying! Heat a pan over medium heat and add a generous amount of cooking oil. Add the sliced garlic and stir-fry until fragrant. Then, add the chopped onion and sauté until it becomes translucent. Once the onion is translucent, add the cocktail shrimp and cook until they turn pink. Next, add the chopped chives, diced pineapple, and 1 tablespoon of curry powder. Stir-fry for another 1-2 minutes until all ingredients are well combined, ensuring the curry powder coats the vegetables and shrimp evenly.

Add a bowl of warm cooked rice to the pan. Sprinkle with 1 tablespoon of oyster sauce and a pinch of black pepper. Using a spatula, gently break up the rice and stir-fry until it’s fluffy and well mixed with all the other ingredients. Once the rice grains are separated and evenly coated, sprinkle with toasted sesame seeds and stir to combine. Taste and adjust seasoning with salt if needed.
