Ingredients
- Shrimp (or your preferred seafood/meat), about 100g
- Eggs, 2 large
- Green onion (white part), 1 stalk
- Carrot, 1/4 medium
- Onion, 1/2 medium
- Zucchini, 1/5 medium
- Canned corn kernels, 1/2 cup
- Fresh pineapple chunks (or canned), 1/2 cup
- Nuoc Mam sauce (or fish sauce), 1.5 Tbsp
- Salt, to taste
Cooking Instructions
Step 1
First, prepare your vegetables. Finely chop the white part of the green onion for maximum flavor infusion. Dice the carrot, onion, and zucchini into small, bite-sized pieces (about 0.5cm) suitable for children. Rinse the shrimp thoroughly.
Step 2
Heat a generous amount of cooking oil in a pan over medium-low heat. Add the chopped green onions and sauté them gently, allowing their fragrance to infuse the oil. This aromatic base is key to a flavorful fried rice.
Step 3
Once the green onions are fragrant, push them to one side of the pan. Crack the 2 eggs into the empty space. If you’re not using a large amount of rice, two eggs are perfectly sufficient. (Feel free to adjust the ingredient quantities to your preference.)

Scramble the eggs with a chopstick or spatula, cooking them until just set but still soft. Imagine making soft scrambled eggs; you don’t want them to be dry, as they’ll blend better with the rice.
Step 5
Now, add the rice. It’s best to use cold or day-old rice for fried rice, as it prevents the grains from clumping. Gently break up any clumps of rice with your spatula and stir-fry it with the scrambled eggs and green onions until well combined.

Add the shrimp, diced onion, and carrot to the pan. Stir-fry everything together for about 2-3 minutes, or until the vegetables are tender-crisp and well incorporated with the rice.

Next, add the diced zucchini and continue to stir-fry. Zucchini cooks quickly, so adding it with the other vegetables works well.

Stir in the corn kernels. (If you’re using fresh corn, boil it first and then cut off the kernels for an even better taste!) The corn adds a lovely color and a delightful pop to the fried rice.

Push the fried rice mixture to one side of the pan. Pour the Nuoc Mam sauce (or fish sauce) into the cleared space and let it sizzle for a moment to release its aroma without the fishy smell. Then, toss everything together to coat the fried rice evenly.

Finally, add the pineapple chunks. Pineapple can become mushy if overcooked, so add it at the very end and stir-fry briefly to maintain its fresh texture and bright flavor.
