Main Ingredients- 1/2 Pineapple
- 1 bowl Cooked Rice (freshly made preferred)
- 1/2 Onion
- 1/3 Zucchini
- 1 handful Defrosted Frozen Shrimp
- 1/4 Scallion (green onion)
Cooking Instructions
Step 1
Begin by preparing the pineapple. Cut the pineapple in half. Then, carefully score the inside flesh with a knife to create a guideline for scooping it out, ensuring you can use the shell as a bowl. Be cautious not to pierce the outer skin.

Using a spoon, gently scoop out the pineapple flesh. Take care not to break the shell or create holes. Once the flesh is removed, lightly pat the inside with a paper towel to absorb any excess moisture.
Step 3
Chop the scooped-out pineapple flesh into bite-sized pieces, about 1-1.5 cm cubes. This will add texture and a burst of flavor to your fried rice.

Prepare the vegetables for the fried rice. Finely chop the scallion to make scallion oil. Dice the onion and zucchini into approximately 1cm cubes. (If using frozen shrimp, ensure they are thawed beforehand.) Feel free to add other vegetables like carrots or peas for extra color and nutrition.

Heat 1-2 tablespoons of cooking oil in a pan over low heat. Add the chopped scallions and sauté slowly until fragrant, creating aromatic scallion oil. Using both the white and light green parts of the scallion will enhance the flavor.

Once the scallion oil is fragrant, add the diced onion and zucchini to the pan. Stir-fry over medium heat until the onions become translucent. Then, add the thawed shrimp and continue to cook until the shrimp turn pink.

Reduce the heat to medium-low. Add the freshly cooked rice (1 bowl) to the pan. Pour in 1 tablespoon of oyster sauce and 1 teaspoon of fish sauce. Using a spatula, gently break up any clumps of rice and stir-fry thoroughly until all ingredients are well combined and the rice is heated through.

Taste the fried rice and adjust the seasoning as needed with salt or pepper. Depending on the amount of rice and vegetables, you may need to adjust the quantities of oyster sauce or fish sauce to achieve your desired flavor balance.
