This is a braised chicken feet dish made with a sauce reminiscent of pig’s trotters. It’s perfect as a side dish with rice or as a delicious accompaniment to drinks!

Ingredients

  • 1kg Chicken Feet, prepared
  • 1 cup Soy Sauce for soup (approx. 200ml)
  • 1.5 cups Brown Sugar (approx. 270g)
  • 1/2 cup Corn Syrup or Oligosaccharide (approx. 100ml)
  • 1 tablespoon Oyster Sauce (approx. 15ml)
  • 1 stalk Green Onion, chopped
  • 10 cloves Garlic
  • 1 piece Ginger, sliced
  • 10 Star Anise pods
  • A pinch of Whole Peppercorns
  • 2 tablespoons Cinnamon Powder (approx. 10g)
  • 5 Bay Leaves
  • A splash of Soju (for deodorizing)

Cooking Instructions

Step 1

First, rinse the chicken feet thoroughly under running water several times to remove any impurities. Washing them diligently will result in a cleaner taste.

In a pot, add enough water to cover the chicken feet and bring it to a boil. Once boiling, add the chicken feet and blanch for 1-2 minutes. This step helps to remove any residual impurities or unpleasant odors.

After blanching, quickly rinse the chicken feet under cold water to cool them down and wash away any remaining impurities. Ensure you drain them well.

In a pot or deep pan, combine the soy sauce for soup, brown sugar, corn syrup, oyster sauce, chopped green onion, garlic cloves, sliced ginger, star anise, whole peppercorns, cinnamon powder, bay leaves, and soju to make the braising liquid. Bring this to a boil over high heat, then reduce to medium heat and simmer for about 15 minutes to allow the flavors to meld.

Strain the braising liquid through a sieve to get a clear sauce, discarding the solids. Now, add the well-rinsed chicken feet to the pot and pour the strained sauce over them. Bring to a boil over high heat, then reduce to medium-low heat and simmer for about 20 minutes, allowing the chicken feet to absorb the flavors. This will create your delicious pig’s trotter-style chicken feet.

Once braised, spread the chicken feet out on a wide plate without overlapping to cool completely. This cooling process is crucial for achieving a chewy, firm texture similar to pig’s trotters. Letting them cool properly makes them much more delicious than eating them hot!
