Perilla Seed Seasoned Bellflower Roots: A Non-Greasy, Water-Sautéed Vegetable Dish (Bitter Taste Removed)
A bellflower root stir-fry made simply and healthily without oil, scallions, or garlic. It’s also a perfect addition to festive holiday tables or ancestral rites.
Main Ingredients- 400g peeled bellflower roots
- Coarse salt (for seasoning bellflower roots)
- Water (for seasoning bellflower roots and stir-frying)
Seasoning- 150ml water
- 1/2 packet vegetable powder broth
- 1-2 tsp King Crab White Soy Sauce (or low-sodium soy sauce)
- 1 Tbsp sesame oil
- 3-4 Tbsp perilla seed powder (heaping)
- Toasted sesame seeds (crushed)
- Whole sesame seeds (for garnish)
- 150ml water
- 1/2 packet vegetable powder broth
- 1-2 tsp King Crab White Soy Sauce (or low-sodium soy sauce)
- 1 Tbsp sesame oil
- 3-4 Tbsp perilla seed powder (heaping)

Cooking Instructions
Step 1
First, in a bowl, place the peeled bellflower roots. Add enough water to cover and 1-2 tablespoons of coarse salt. Knead the roots vigorously by hand until a milky liquid is released, which helps remove bitterness. Treat them as if you were washing laundry.
Step 2
Let the kneaded bellflower roots sit in the saltwater for about 20 to 30 minutes. This step is crucial for effectively removing the bitter taste and allowing the roots to absorb a subtle seasoning.
Step 3
After soaking, rinse the bellflower roots thoroughly under cold running water several times. This ensures the bitterness is gone while retaining a gentle seasoning. Lightly squeeze out excess water.
Step 4
Now, prepare for stir-frying. In a wok or deep pan, add 150ml of water and stir in 1/2 packet of the vegetable powder broth until dissolved.

Add the prepared bellflower roots to the pan. Season with 1-2 teaspoons of King Crab White Soy Sauce (adjust the amount to your preference). This adds a delicate savory note.

Cook over high heat for at least 5 minutes, stirring occasionally. Allow the liquid to reduce and the bellflower roots to become tender. Continue to stir to prevent sticking and burning.

Turn off the heat and add the final seasonings. Stir in 1 tablespoon of sesame oil and a generous amount of perilla seed powder (3-4 heaping tablespoons). The ample use of perilla seed powder is key to its delicious nutty flavor.
Step 8
