Seasoning Ingredients- 3-4 Tbsp Olive Oil
- 1 Tbsp Minced Garlic
- 2 Tbsp Soy Sauce for Soup (Guk-ganjang)
- 1 Tbsp Cooking Sake (or Mirin)
- 3-4 Tbsp Perilla Seed Powder (adjust to taste)
- A drizzle of Sesame Oil
- A pinch of Toasted Sesame Seeds
- 3-4 Tbsp Olive Oil
- 1 Tbsp Minced Garlic
- 2 Tbsp Soy Sauce for Soup (Guk-ganjang)
- 1 Tbsp Cooking Sake (or Mirin)
- 3-4 Tbsp Perilla Seed Powder (adjust to taste)
- A drizzle of Sesame Oil
- A pinch of Toasted Sesame Seeds
Cooking Instructions
Step 1
First, soak the dried arrowhead stems in cold water for about 5-6 hours until fully rehydrated. It’s convenient to soak them overnight. Once softened, rinse the stems thoroughly by rubbing them between your hands. Then, cut them into bite-sized pieces, about 5-7 cm long.
Step 2
Wash the scallion and finely chop it, focusing on the white parts. The scallion’s aroma will blend beautifully with the seasoning, adding another layer of flavor.
Step 3
Heat a pan over medium-low heat and add 3-4 tablespoons of olive oil. Add the chopped scallion and 1 tablespoon of minced garlic. Sauté for about 30-40 seconds until fragrant, infusing the oil with their aromas.
Step 4
Once the oil is fragrant, add the rehydrated arrowhead stems to the pan and stir-fry. Add 2 tablespoons of soy sauce for soup and 1 tablespoon of cooking sake, mixing well to coat the stems. Pour in half a cup (about 100ml) of water. Increase the heat to high and stir-fry for about 3-4 minutes until the ingredients are well combined and the liquid has reduced slightly.
Step 5
When the liquid has reduced to your liking, add 3-4 tablespoons of perilla seed powder. Mix thoroughly to ensure the perilla seed powder evenly coats the arrowhead stems, preventing any clumps. The nutty aroma of the perilla seed powder will be truly enticing.
Step 6
Once everything is well combined and the nutty flavor of the perilla seed powder is prominent, turn off the heat. Finish with a drizzle of sesame oil and a sprinkle of toasted sesame seeds for a perfectly delicious arrowhead stem stir-fry! The crisp yet slightly chewy texture, combined with the rich, nutty perilla flavor, is exquisite. It’s also rich in dietary fiber, making it excellent for dieting and promoting digestive health.
