Ingredients
- Half head of aged kimchi (approx. 300g)
- 2 Tbsp perilla oil
- 1/4 stalk green onion (mostly white part, finely chopped)
- 1 tsp minced garlic
- 1 tsp sugar
- A pinch of sesame seeds

Step 1
Today, we’re making a crowd-pleasing delicacy: stir-fried aged kimchi with perilla oil. Rinsing and stir-frying aged kimchi creates a clean and flavorful side dish.
Step 2
First, prepare half a head of aged kimchi. Thoroughly rinse the kimchi, squeezing out as much water as possible. Cut it into bite-sized pieces (about 2cm wide). Heat 2 tablespoons of perilla oil in a wide pan over medium-low heat. Add the finely chopped green onions and stir-fry until fragrant, releasing their aroma into the oil (making scallion oil). Once the scallions are fragrant, add 1 teaspoon of minced garlic and stir-fry together to add the garlic aroma.
Step 3
Add the prepared aged kimchi to the pan. Sprinkle 1 teaspoon of sugar evenly over the kimchi. The sugar is added to neutralize any strong or stale odors from the aged kimchi and to mellow its characteristic sourness. Increase the heat to medium and stir-fry for about 5-7 minutes until the kimchi becomes tender and slightly caramelized. It’s important to stir frequently to prevent it from sticking to the bottom of the pan. Once the kimchi is cooked to your liking, sprinkle in a pinch of sesame seeds and stir-fry for another minute to finish.
