Main Ingredients- 3 fresh eggs
- 1 stalk of scallion
Seasoning & Others- 3 Tbsp perilla oil
- 1 Tbsp soy sauce
- A pinch of sesame seeds

Cooking Instructions
Step 1
First, prepare one stalk of crisp scallion. Finely chop both the white and green parts of the scallion into about 0.5 cm thick pieces. Place all the chopped scallions into the frying pan.
Step 2
Generously drizzle 3 tablespoons of fragrant perilla oil over the scallions in the pan. Using plenty of perilla oil is key to maximizing its nutty aroma.
Step 3
Now, adjust the heat to low and gently sauté the scallions in the perilla oil. Cook until the scallions turn translucent, soften, and the fragrant perilla oil aroma starts to gently waft out. This process brings out the sweetness of the scallions.
Step 4
Once the scallions are sufficiently sautéed, carefully crack three eggs one by one directly over the cooked scallions. Try to avoid breaking the yolks as you place them in the pan.
Step 5
Keeping the heat on low, cover the frying pan with a lid and let the eggs cook. You can adjust the cooking time based on your preference. For a soft, runny yolk, cook for about 2-3 minutes. For a firm, fully cooked yolk, cook for 4-5 minutes. If you prefer a fully cooked egg but don’t want the yolk to be overly firm, you can gently poke the yolk with your spatula just before serving.
