  • 1 tsp Mirin (Rice Wine)
  • 1-2 drops Vinegar
  • 1 tsp Minced Garlic
  • 1 tsp Roasted Perilla Seeds (lightly crushed)
  • 1 pinch Gochugaru flakes (optional, for a hint of spice)

Saltwort Salad Dressing

  • 1 tsp Perilla Oil
  • 1/2 Tbsp Plum Extract (Maesilcheong)
  • 1 tsp Crushed Chili Flakes (Gochugaru)
  • 1 tsp Fish Sauce (Aekjeot)

In a small bowl, combine all the ingredients: soy sauce, fragrant perilla oil, sweet and flavorful plum extract, mirin to balance the flavors, a tiny hint of vinegar for brightness, minced garlic for a bit of zing, crushed perilla seeds for texture, and a pinch of chili flakes for a subtle kick. Mix everything well until fully combined.

Place the saltwort in a mixing bowl, pour the prepared dressing over it, and gently toss using chopsticks. Avoid overmixing or using too much force, as this can make the saltwort taste bitter or grassy. Toss lightly, as if you’re gently lifting and folding.
