First, prepare your egg mixture for the jidan. Whisk the eggs thoroughly. For an even smoother texture, you can strain the egg mixture through a fine-mesh sieve. A pinch of salt can be added for flavor.

Heat your non-stick pan over medium-low heat. Use only a minimal amount of cooking oil. Too much oil can prevent the egg from spreading thinly and evenly, making it difficult to flip later. Wiping the pan with a paper towel dipped in oil to create a very thin coating is ideal.
