Boiling Ingredients- Pork Belly 1 portion (approx. 600g)
- White part of 1 leek
- 3 whole peppercorns
- 3-4 bay leaves
- 2 dried chili peppers (optional, for a hint of spice)
- 1/2 ginger (sliced)
- 3 cloves garlic
- 1 tablespoon instant coffee granules
Seasoning for Serving (Optional)- 1 Tbsp sugar
- 1 small soju cup (approx. 50ml) soju
- 2 Tbsp soybean paste (doenjang)

Cooking Instructions
Step 1
In a large pot, add all the ingredients that will help tenderize the pork and remove any unwanted odors. Include the white parts of the leek, whole peppercorns, bay leaves, dried chilies, sliced ginger, and whole garlic cloves. Don’t forget to add the instant coffee granules. Using a variety of aromatics will enhance the bossam’s flavor.
Step 2
Once the water comes to a rolling boil, carefully add the whole piece of pork belly. If it’s too large to fit comfortably, you can cut it in half. Adding the pork to boiling water helps to seal in the juices.
Step 3
Make sure to add the instant coffee to the boiling water! Coffee is a secret ingredient that effectively neutralizes any porky smell and gives the bossam a beautiful, appetizing color. Use black coffee for the best results.
Step 4
Bring the water to a boil over high heat, then reduce to medium heat, cover the pot, and simmer for about 30 minutes. Adjust the cooking time based on the thickness of the pork. After simmering, turn off the heat and let the bossam rest in the pot, covered, for another 20 minutes. This resting period allows the meat to become incredibly moist and tender.

Once cooked, slice the pork belly into bite-sized pieces. Pork belly yields a wonderfully rich and tender bossam with every bite. Arrange the sliced bossam attractively on a plate and serve immediately with fresh kimchi, ssamjang, or your favorite dipping sauces.
