  • 1/5 Onion (thinly sliced)
  • Cherry tomatoes (for garnish, about 5-6)
  • Bell pepper (a small amount of various colors, for garnish)
  • 1 Tbsp Butter (unsalted butter recommended for best flavor)

Before cooking, heat your steak pan to the absolute highest temperature possible. A very hot pan is crucial for searing the steak’s exterior, locking in all the delicious juices. The pan is ready when you can see a faint wisp of smoke.

Add a drizzle of olive oil to the scorching hot pan, then carefully place the seasoned steak onto it. Cook over medium-high heat for about 2 minutes until a beautiful brown crust forms. You should hear a satisfying ‘sizzle’ when the meat hits the pan.

Continue cooking the steak, turning it to sear all four sides (top, bottom, and both edges) for 2 minutes each. Afterward, give each side an additional 1 minute of cooking. This process ensures a crispy exterior while keeping the inside tender and juicy. Adjust cooking times based on steak thickness and your preferred level of doneness.

Add 1 tablespoon of butter to the pan and let it melt. Once melted, toss in your prepared vegetables (onion, cherry tomatoes, bell peppers). Tilt the pan and spoon the melted butter over the steak repeatedly (this is called ‘basting’ or ‘arroser’) to infuse it with rich flavor. Continue cooking for about 1 more minute, allowing the vegetables to slightly soften and the steak to develop attractive grill marks.

Resting allows the juices to redistribute throughout the meat, resulting in a more tender and moist steak. You can loosely tent it with aluminum foil to keep it warm.
