Braised pork ribs might sound intimidating, but they’re surprisingly simple! This recipe focuses on achieving the perfect sauce ratio and slow-cooking to tender perfection. Enjoy this easy yet impressive dish!
Main Ingredients- 1kg Pork ribs
- 3 Potatoes
- 1 Onion
- 0.5 to 1 Carrot
Soy-Braised Pork Ribs Sauce- 10 Tbsp Soy sauce
- 5 Tbsp Sugar
- 5 Tbsp Mirin (or cooking wine)
- 2.5 Tbsp Minced garlic
- 0.5 tsp Ginger powder (or 1 tsp minced fresh ginger)
- 1 Tbsp Sesame oil
- 1-2 Green onions (cut into large pieces)
- 10 Tbsp Soy sauce
- 5 Tbsp Sugar
- 5 Tbsp Mirin (or cooking wine)
- 2.5 Tbsp Minced garlic
- 0.5 tsp Ginger powder (or 1 tsp minced fresh ginger)
- 1 Tbsp Sesame oil
- 1-2 Green onions (cut into large pieces)
Cooking Instructions
Step 1
You don’t need to pre-soak the pork ribs to remove blood. Place the pork ribs in a pot with cold water and bring to a boil for about 10 minutes. This helps to remove impurities. After boiling, rinse the ribs under cold water and drain well for a cleaner flavor.
Step 2
The secret to delicious braised pork ribs is the perfect sauce ratio! For every 200g of meat, use a ratio of 2 parts soy sauce, 1 part sugar, 1 part mirin, 2 parts water, 0.5 part minced garlic, and green onions to your preference. Mix these ingredients to create a foolproof, flavorful sauce. (Adjust the quantities based on the total amount of meat.)
Step 3
Combine the prepared pork ribs and the sauce in a pot. Gently massage the sauce into the ribs. Letting it marinate for a short while will further enhance the flavor.
Step 4
Roughly chop one onion and add it to the pot with the pork ribs and sauce. The natural sweetness of the onion will deepen the flavor of the braised ribs.

Cover the pot and simmer over low heat for 1 hour. If you are using a pressure cooker, cook for about 30 minutes after the pressure starts building. This will significantly reduce the cooking time while ensuring tender results.

The tenderness of the ribs depends on the cooking time. This can vary depending on the cut of meat and the intensity of your heat. It’s crucial to periodically taste the meat and continue cooking until it is perfectly tender.

Once the pork ribs are sufficiently tender, add the prepared potatoes and carrots (cut into large pieces) to the pot. Continue to simmer for another 15-20 minutes, or until the vegetables are tender.
