Main Ingredients

  • 300g well-fermented kimchi radish (generous amount)
  • 250g fresh beef sirloin
  • 2 servings of instant rice (warm)
  • 1/2 stalk of green onion
  • 6 Tbsp kimchi radish brine
  • 1/2 Tbsp gochujang (Korean chili paste)
  • 1 Tbsp oligosaccharide (or corn syrup)
  • Pinch of salt, to taste
  • Pinch of black pepper
  • Oyster sauce (optional, a touch)

Cooking Instructions

Step 1

First, prepare 300g of kimchi radish. Chop it into bite-sized pieces that will mix well with the rice. The ripeness of your kimchi radish will affect the flavor, so using a sour, well-fermented one will yield the best results.

Next, prepare half a stalk of green onion. Finely chop it. Sautéing the green onion will create a fragrant green onion oil, which will deepen the flavor of your fried rice.

Now, heat a pan over medium heat and add a little cooking oil. Add the chopped green onion and sauté for about 2 minutes until fragrant. Make sure to extract plenty of flavor from the green onion.

Once the green onion is fragrant, add 250g of the trimmed beef sirloin to the pan. Lightly season the beef with salt and pepper. Break up the meat as it cooks to ensure even browning.

When the beef is browned on the outside, add the prepared kimchi radish. Stir everything together so the kimchi radish mixes well with the beef.

After adding the kimchi radish, stir in 1 tablespoon of soy sauce and about 5-6 tablespoons of the kimchi radish brine. The brine is key to the savory flavor of this fried rice, so don’t be shy with it! Stir-fry over medium-low heat for about 5-6 minutes until the ingredients are well combined.

As the sauce begins to reduce, add about 50ml of water. This helps keep the fried rice moist and prevents it from becoming too dry. Continue to cook for another 3-4 minutes after adding the water.

Now, it’s time to add ingredients that will enrich the flavor further. Add 1/2 tablespoon of gochujang and 1 tablespoon of oligosaccharide. Stir well until everything is evenly coated. The gochujang will also give the fried rice a tempting color.

This is the final step! Add the two servings of warm instant rice. Gently mix the rice with the kimchi radish mixture, being careful not to mash the rice grains. Continue to stir-fry until each grain of rice is coated with the delicious sauce.

Finally, taste and adjust the seasoning. Add a pinch of salt if needed, and a touch of oyster sauce for extra depth of flavor, if desired. Once all the flavors are harmoniously blended, your delicious kimchi radish fried rice is complete! Enjoy your meal!
