Ingredients

  • 1/4 head of well-fermented kimchi, finely chopped (approx. 200g)
  • 1 can of tuna, drained
  • 2.5 Tbsp pancake mix (approx. 35g)
  • 100ml water
  • 1 egg
  • Cooking oil, for frying

First, finely chop the kimchi into bite-sized pieces. Aim for about 0.5-1 cm in size, as larger pieces might take longer to cook. Adding a little bit of kimchi juice will enhance the flavor and seasoning.

Drain the oil thoroughly from the canned tuna. Excess oil can make the pancake greasy. Add the drained tuna to the chopped kimchi and gently mix them together.

Now, let’s prepare the batter. Crack one egg into a bowl. Add the 2.5 tablespoons of pancake mix and 100ml of cold water. Whisk everything together with a whisk or spoon until well combined and smooth, ensuring there are no lumps of flour. The batter should be slightly thick; too thin and it will be difficult to handle, too thick and it might be dense. Pour this batter into the bowl with the kimchi and tuna mixture and stir until evenly incorporated.

Heat a frying pan over medium heat and generously add cooking oil. Once the oil is hot, pour a ladleful of the batter onto the pan and spread it out thinly. It’s important to make it thin so it cooks through evenly. When the bottom side turns golden brown, carefully flip the pancake with a spatula and cook the other side until equally golden and crisp. Cooking it slowly will ensure a wonderfully crispy texture.
