Ingredients

  • Rice cakes (tteok) 2-3 cups (paper cup measure, any kind works!)
  • Green onion 1/2 stalk
  • Fish cakes 2 sheets

Sauce

  • Sugar 3 Tbsp
  • Gochugaru (Korean chili flakes) 2.5 Tbsp
  • Gochujang (Korean chili paste) 2.5 Tbsp
  • Soy sauce 1 Tbsp
  • Black pepper, a pinch
  • Sesame seeds, a pinch
  • Water 2 Tbsp (for mixing the sauce)

Cooking Instructions

Prepare the rice cakes: I prefer using chewy mill-tteok (flour-based rice cakes). If using frozen rice cakes, soak them in cold water for about 10 minutes to thaw, then rinse them thoroughly multiple times. If your rice cakes are not frozen, simply rinse them under running water. Rinsing helps the cakes absorb the sauce better and makes them softer.

Prepare the other ingredients: Cut the fish cakes into bite-sized pieces, about 2×4 cm. Slice the green onion diagonally into 1-2 cm lengths; this enhances the flavor when mixed with the sauce. Having all ingredients prepped makes the cooking process much smoother.

Make the perfect sauce: Now, for the star of the show – the sauce! In a bowl, combine 3 Tbsp of sugar, 2.5 Tbsp of gochugaru, 2.5 Tbsp of gochujang, 1 Tbsp of soy sauce, a pinch of black pepper for a little kick, and a pinch of sesame seeds for nutty aroma. I guarantee you won’t fail with this ratio; it’s a perfect balance of sweet, savory, and spicy! (Of course, taste is subjective, so feel free to adjust the seasonings to your liking. I like to mix in 2 Tbsp of water with the sauce ingredients to make it a bit smoother.)

Combine and cook: Place the prepared rice cakes and fish cakes into a pot or a deep pan. Add 1.5 to 2 cups of water and pour in the sauce you just made. Bring it to a boil over high heat. Once the water starts bubbling vigorously, be ready to adjust the heat.

Simmer and thicken: Once boiling, reduce the heat to medium-low. This allows the rice cakes to cook through without burning and ensures the sauce coats everything evenly. Add the sliced green onions and let it simmer, stirring occasionally, until the sauce has thickened and clings to the rice cakes. Continuous stirring prevents sticking.
