Introducing ‘Gyeran Jang’, a delightful dish featuring perfectly soft-boiled eggs with a wonderfully moist texture, bathed in a delicious soy-based marinade. Its long shelf life makes it an excellent addition to your banchan (side dish) repertoire, offering convenience and deliciousness.
Main Ingredients- 10 fresh eggs
- 1 large onion
- 2 Korean green chili peppers (cheongyang peppers)
- 1 large green onion (scallion)
- 1 Tbsp salt
- 2 Tbsp vinegar
Marinade- 200ml soy sauce (approx. 1 cup)
- 100ml water (approx. 1/2 cup)
- 100ml corn syrup or oligodang (approx. 1/2 cup)
- 1 Tbsp toasted sesame seeds
- 1 Tbsp minced garlic

Cooking Instructions
Step 1
Place 10 eggs in a deep pot or pan and cover with enough water to fully submerge the eggs. Add 1 Tbsp of salt and 2 Tbsp of vinegar to the water. This helps prevent the eggs from cracking during boiling and makes peeling easier later. Bring to a boil over medium heat and cook for about 10-12 minutes, adjusting the time based on your desired level of doneness (soft-boiled or hard-boiled).
Step 2
Once boiled, immediately transfer the eggs to a bowl of ice water. Let them soak for at least 10 minutes until completely cooled. This stops the cooking process and creates a slight separation between the egg white and the shell, making them much easier to peel.
Step 3
Prepare the aromatics for the marinade. Finely dice 1 large onion. Chop the white part of 1 large green onion into small pieces. Mince 2 Korean green chili peppers, removing the seeds for less heat if desired.
Step 4
In a clean, airtight container, combine the finely diced onion, chopped green onion, and minced chili peppers. Add 1 Tbsp of minced garlic and 1 Tbsp of toasted sesame seeds. Mix everything together evenly.
Step 5
Now, let’s make the flavorful marinade. Pour 200ml of soy sauce, 100ml of water, and 100ml of corn syrup (or oligodang) into the container with the vegetables. Stir gently with a spatula or spoon to ensure all ingredients are well combined and there are no clumps.
Step 6
Carefully place the peeled, cooled boiled eggs into the marinade. You can gently shake the container or turn the eggs to ensure they are fully submerged and the marinade coats them evenly.
Step 7
Seal the container tightly and give it a gentle shake to distribute the marinade. Refrigerate for at least one day to allow the flavors to meld and the eggs to soak up the delicious soy sauce. The longer it marinates, the deeper the flavor will become.
Step 8
Once marinated, the Gyeran Jang is ready to be enjoyed! Take out the desired amount of eggs from the container to serve with your meals. They are delicious on their own, or perfectly complement a bowl of steamed rice.
