Step 1
First, gently hold the shrimp’s head and twist to separate it. Then, peel the shell from the head to the tail lengthwise, and also neatly remove the pointy leg parts. (Tip: Don’t throw away the shrimp heads! Lightly roasting them in an air fryer or pan makes a delicious snack. Alternatively, store them in a zip-top bag in the freezer and use them when making broth to significantly enhance the umami flavor.)
Step 2
Next, insert a toothpick into the second or third segment on the shrimp’s back and gently pull. You’ll see a thin black thread, which is the shrimp’s intestine. This intestine causes a fishy and slightly bitter taste, so it’s best to remove it cleanly. If you don’t have a toothpick, you can use the pointy end of a spoon or fork.
Step 3
Especially if you plan to make fried shrimp, pay attention to this part! If you look closely at the back of the shrimp’s tail, there’s a small triangular protrusion. This is the shrimp’s ‘water gun’. It’s a good idea to snip this off with scissors. This prevents oil splattering during frying, making the cooking process safer and cleaner.
