Steak Ingredients- 400g Pectoral Steak (approx. 1cm thick)
- 1 Tbsp Olive Oil
- Pinch of Salt
- A little Rosemary (optional)
Cooking Instructions
Step 1
We’ve prepared 400g of pectoral steak, perfect for home cooking at about 1cm thickness. This thickness allows for a tender cooked interior without overcooking the outside. Avoid steaks that are too thick, as they can burn on the outside while remaining undercooked inside.
Step 2
Place the pectoral steak in a large bowl or dish. Drizzle 1 tablespoon of olive oil over both sides, ensuring it’s evenly coated. Using a disposable glove, gently rub the oil into the meat to help it penetrate. This step tenderizes the steak and prevents it from sticking to the pan.
Step 3
Generously grind fresh salt over both sides of the oiled pectoral steak. It’s best to salt your steak just before cooking. The salt helps draw out moisture, creating a crispier crust. If you enjoy black pepper, feel free to add it now as well.
Step 4
Prepare the vegetables to accompany your steak. Feel free to use whatever you have in your refrigerator! Separate 100g of oyster mushrooms into individual pieces. Cut 1 green onion into 2cm lengths. Slice 3 Cheongyang peppers diagonally for a touch of heat. If you want to add more fragrance, have some rosemary ready at this stage.
Step 5
Heat a pan over high heat until very hot, then add a little olive oil. Carefully place the prepared pectoral steak into the hot pan. Once the first side is nicely seared, flip it and cook the other side for the same amount of time, about 2-3 minutes per side. Avoid flipping the steak too often; one flip is ideal for a good sear. You’re aiming for a beautiful golden-brown crust.
Step 6
When the steak is nearly cooked, add 1 tablespoon of butter to the side of the pan. As the butter melts, spoon it over the steak (this technique is called ‘basting’). This will infuse the meat with the rich, nutty flavor of the butter, enhancing its overall taste. If you’re using rosemary, add it to the pan with the butter to release its aroma.
Step 7
Remove the perfectly seared steak from the pan and transfer it to a preheated grill pan. Lightly sear both sides on the grill pan to create attractive grill marks. This step further enhances the steak’s flavor and visual appeal. (This step can be skipped if you don’t have a grill pan).
Step 8
In the same pan used for the steak, add the prepared vegetables and stir-fry them. The remaining steak juices and butter in the pan will coat the vegetables, making them incredibly flavorful. Sauté the vegetables quickly until they are slightly tender but still retain some crispness.
Step 9
Slice the steak into bite-sized pieces and arrange them on a plate with the stir-fried vegetables. You don’t need a special sauce!
