Fried Rice Ingredients- 2 large eggs
- 1 bowl of cooked rice (warm)
- 1 ladleful of ham (or bacon, sausage, about 50g)
- 1/2 onion (small)
- 1 ladleful of green onion (white part mainly, about 30g)
Special Sauce- 3 Tbsp Tonkatsu sauce
- 5 Tbsp Ketchup
- 2 Tbsp Oligosaccharide (or corn syrup, sugar)

Cooking Instructions
Step 1
First, prepare the vegetables and ham for the fried rice. Finely mince the onion and green onion. Dice the ham into small, bite-sized pieces. Crack the eggs into a bowl and whisk them thoroughly with a fork or whisk to create an egg mixture. For extra flavor, you can add a pinch of salt and pepper.
Step 2
Heat a non-stick pan over medium-low heat and add a generous amount of cooking oil. Pour the whisked egg mixture to cover the entire pan, forming a round shape. As the egg begins to set around the edges, reduce the heat to low. Before the egg is fully cooked, while it’s still soft and slightly runny, turn off the heat. This creates a delicate, soft egg omelet, the key to a perfect omurice.
Step 3
Wipe the pan clean, or use a separate pan heated over medium heat with a little cooking oil. Add the minced green onions first and sauté until fragrant, releasing their aromatic oil. This ‘green onion oil’ significantly enhances the flavor of the fried rice. Once fragrant, add the diced ham and onion, and stir-fry until the onions become translucent.
Step 4
When the onions are translucent, add all the special sauce ingredients (Tonkatsu sauce, ketchup, oligosaccharide) to the pan. Stir well and cook for about 1 minute until the sauce thickens and coats the ingredients. Then, add the warm cooked rice. Using a spatula, break up any clumps of rice and stir-fry quickly for about 1 minute, ensuring each grain is coated with the sauce and ingredients. It’s important to break up the rice well to avoid lumps.
Step 5
Carefully place the finished fried rice onto a serving plate, shaping it neatly. Gently place the soft egg omelet you prepared earlier over the fried rice, covering it completely. Gently shape the egg to enclose the rice, and your omurice is ready! For an extra touch, drizzle with ketchup or your favorite sauce before serving.
