  • 230g pork tenderloin
  • 2 Tbsp butter
  • 1 Tbsp *cooking wine* (or *mirin*)
  • 3 Tbsp *tempura flour*
  • 7 green beans
  • Pinch of salt

  • 3 medium white peaches
  • 40ml white wine
  • 40ml lemon juice
  • 3.5 Tbsp sugar (adjust to taste)
  • 1 pinch of salt
  • Pinch of black pepper

Cooking Instructions

Step 1

Cut the pork tenderloin into steak-sized portions. Gently pat the surface dry with paper towels. Then, use a meat mallet or the back of a knife to lightly pound both sides of the pork. This tenderizing step ensures a wonderfully soft texture when you bite into the steak.

Step 2

Sprinkle the tenderized pork tenderloin evenly with 1 Tbsp of cooking wine (or mirin) to remove any gaminess. Season lightly with salt and pepper. Let the pork rest for a moment to allow the seasonings to penetrate.

Wash the green beans thoroughly. Blanch them in boiling water with a pinch of salt for about 30 seconds to 1 minute, just until they turn bright green and are slightly tender-crisp. Avoid overcooking, as you want them to retain their crunch. Drain the blanched green beans and immediately rinse them under cold water to stop the cooking process. Pat them dry completely.
