- 1 Tbsp minced garlic
- 1 tsp minced ginger
- 3 Tbsp yuja-cheong (citron preserve)
- 1/2 tsp black pepper
- 2 Tbsp soy sauce
- 2 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp mirin (rice wine)
- 1 Tbsp minced garlic
- 1 tsp minced ginger
- 3 Tbsp yuja-cheong (citron preserve)
- 1/2 tsp black pepper
Cooking Instructions
Step 1
Prepare the whole chicken by cutting it into pieces, similar to how you would for braised chicken (dakbokkeumtang). Season generously with salt and pepper, then let it sit at room temperature for about 30 minutes. This pre-seasoning, or ‘curing,’ allows the flavors to penetrate the meat.
Step 2
Today, instead of fried chicken, we’re making a crowd-pleasing seasoned chicken! Let’s prepare the special sauce for that perfect sweet and spicy flavor. In a bowl, combine 2 Tbsp soy sauce, 2 Tbsp gochujang, 2 Tbsp gochugaru, 2 Tbsp mirin, 1 Tbsp minced garlic, 1 tsp minced ginger (optional), 3 Tbsp yuja-cheong, and 1/2 tsp black pepper. Mix well until everything is thoroughly incorporated. The citrusy notes from the yuja-cheong will add a wonderful depth to the sauce.
Step 3
We will fry the chicken pieces, pre-seasoned with salt and pepper, twice. Double-frying is the secret to achieving incredibly crispy chicken with a juicy interior.
Step 4
Pour a generous amount of cooking oil into a deep pan or wok. Heat the oil over high heat until it reaches the optimal frying temperature, around 170°C (340°F).
Step 5
Carefully add the pre-seasoned chicken pieces to the hot oil. Avoid overcrowding the pan, as this can lower the oil temperature and result in greasy chicken. Fry in batches if necessary.
Step 6
Fry the chicken for about 5-7 minutes, or until the surface turns a nice golden brown. It should look partially cooked and appealingly colored.
Step 7
Remove the fried chicken from the oil and place it on a wire rack or paper towels to drain off excess oil. Let it cool slightly.
Step 8
Once slightly cooled, return the chicken pieces to the hot oil for a second fry. Fry for a shorter period, about 2-3 minutes, over medium-high heat. This second fry is crucial for developing a super crispy texture, even without a batter.
Step 9
Continue to fry until both sides of the chicken are evenly golden brown and wonderfully crisp. This double-frying method ensures the chicken stays crispy even after being coated in sauce.
Step 10
After removing the chicken from the second fry, pour out most of the oil from the pan. Line the pan with several layers of paper towels and place the fried chicken on top. This will absorb any remaining oil, making the chicken less greasy and even crispier.
Step 11
At this point, the chicken is perfectly fried and could be enjoyed as is for a delicious fried chicken dish! However, today we’re taking it up a notch to create a spectacular party-style seasoned chicken.
Step 12
Tonight is a family party, so let’s make it even more festive and visually appealing!
Step 13
Cut the broccoli into bite-sized florets. Briefly blanch them in boiling water with a pinch of salt for about 30 seconds to 1 minute. You want them to be tender-crisp, not mushy.
Step 14
Immediately transfer the blanched broccoli to cold water to stop the cooking and retain their vibrant green color. Drain well and set aside.
Step 15
Slightly heat some oil in a pan over medium heat. Add the sliced onions and sauté until they become translucent and slightly softened. The sweetness released from the onions will enhance the sauce’s flavor.
Step 16
Once the onions are softened, add the prepared red bell pepper, carrot, and whole garlic cloves (you can slice or mince the garlic if preferred). Add a pinch of salt and stir-fry everything together until the vegetables are tender-crisp. Avoid overcooking to maintain their fresh texture.
Step 17
All the preparations for the ingredients are now complete. See? It’s quite straightforward!
Step 18
In a separate pan or wok, pour in the prepared special sauce. Heat over medium heat and bring it to a gentle simmer. Once it starts to bubble, reduce the heat slightly to prevent burning.
Step 19
As the sauce begins to simmer, add all the double-fried chicken pieces into the pan.
Step 20
Stir-fry quickly to coat the chicken evenly with the sauce. Then, add the sautéed vegetables and toss everything together with a swift motion.
Step 21
Toss gently just until the sauce coats the chicken and vegetables. Be careful not to overcook, as this can soften the crispy chicken. Maintaining the right heat is key to prevent the sauce from sticking or burning.
Step 22
Transfer the beautifully coated Party Seasoned Chicken to a serving platter. It’s ready to impress with its vibrant color and generous presentation!
Step 23
An insider tip for extra deliciousness: season the sauce lightly and ensure each ingredient is seasoned subtly during cooking. This allows the flavors to meld evenly throughout the dish, resulting in a more balanced and enjoyable taste experience.
Step 24
Enjoying this homemade Party Seasoned Chicken with your loved ones, sharing stories over a cold beer, creates truly precious and bonding moments. These times are nourishing for the soul and strengthen family ties. Make wonderful memories together!
