  • 3 Tbsp yuja-cheong (citron preserve)
  • 1/2 tsp black pepper

Prepare the whole chicken by cutting it into pieces, similar to how you would for braised chicken (dakbokkeumtang). Season generously with salt and pepper, then let it sit at room temperature for about 30 minutes. This pre-seasoning, or ‘curing,’ allows the flavors to penetrate the meat.

Today, instead of fried chicken, we’re making a crowd-pleasing seasoned chicken! Let’s prepare the special sauce for that perfect sweet and spicy flavor. In a bowl, combine 2 Tbsp soy sauce, 2 Tbsp gochujang, 2 Tbsp gochugaru, 2 Tbsp mirin, 1 Tbsp minced garlic, 1 tsp minced ginger (optional), 3 Tbsp yuja-cheong, and 1/2 tsp black pepper. Mix well until everything is thoroughly incorporated. The citrusy notes from the yuja-cheong will add a wonderful depth to the sauce.
