Ingredients

  • 4 eggs
  • 1 paper cup measure of hotcake mix
  • 1 paper cup measure of milk
  • 1 Tbsp olive oil (for greasing paper cups)
  • 1 dried apricot (for topping, or other dried fruit/nuts)

Seasoning & Other

  • 1 Tbsp sugar (for batter)
  • 4 pinches of salt (to sprinkle on each egg)
  • 4 paper cups

Cooking Instructions

Step 1

First, gather all the ingredients needed to make this delicious egg bread. Make sure the paper cups you’ll be using are clean.

Step 1

Step 2

In a large bowl, add 1 paper cup of hotcake mix. Then, pour in 1 Tbsp of sugar and 1 paper cup of milk. The ratio of hotcake mix to milk might vary slightly depending on the brand, so refer to the instructions on your hotcake mix packaging to achieve the right batter consistency.

Step 2

Step 3

Using a whisk or spatula, mix the ingredients thoroughly until you have a smooth batter with no lumps. It’s important to check the consistency to ensure it’s neither too thin nor too thick.

Step 3

Step 4

Now, let’s prepare the paper cups for baking the egg bread. Evenly brush the inside of each of the 4 paper cups with olive oil. Greasing the cups thoroughly will help the finished egg bread release easily.

Step 4

Step 5

Pour the batter into each paper cup, filling it about halfway. Next, carefully crack an egg into the batter. To prevent the yolk from breaking and to ensure it doesn’t burst during cooking, gently pierce the yolk 1-2 times with a fork or toothpick. Sprinkle 1 pinch of salt over each egg to enhance the flavor and reduce any eggy smell.

Step 5

Step 6

Time to microwave! Place the prepared paper cups inside your microwave and cook for 5 minutes. Cooking times may vary slightly depending on your microwave’s wattage. You can check the doneness after about 4 minutes and add more time if needed.

Step 6

Step 7

I’ve finely chopped a dried apricot for topping. Feel free to use other dried fruits like raisins or cranberries, or even chopped nuts, to personalize your egg bread. Toppings are optional and the bread is delicious without them too!

Step 7

Step 8

Once the microwave cooking is complete, carefully remove the paper cups. Turn them upside down; if you greased them well, the bread should slide out easily. If it sticks a bit, gently squeeze the sides of the paper cup.

Step 8

Step 9

Voila! Your tempting paper cup egg bread is ready. Slicing it in half reveals a perfectly cooked, fluffy egg. The sweetness from the hotcake mix and the richness of the egg create a delightful combination.

Step 9

Step 10

This simple yet nutritious paper cup egg bread is a fantastic option for breakfast or as an afternoon snack for kids. Leftovers can be stored in an airtight container in the refrigerator and reheated. Enjoy your delicious creation!
