Main Ingredients- 2 medium King Oyster Mushrooms
- 2 Eggs
- A small amount of Green Onion (finely chopped)
Sauce- 1.5 Tbsp Soy Sauce
- 1 Tbsp Water
- 1.5 Tbsp Soy Sauce
- 1 Tbsp Water
Cooking Instructions
Step 1
First, wash the king oyster mushrooms and pat them dry. Slice them into about 0.7cm (approx. 1/4 inch) thick rounds – avoid slicing them too thinly, as they can shrink significantly when cooked. In a bowl, crack the eggs, whisk them thoroughly to break the yolks and remove the chalazae (the stringy bits). Prepare the egg wash. Finely chop the green onion, using both the white and green parts.
Step 2
Dip each mushroom slice evenly into the prepared egg wash, ensuring both sides are well-coated. This step is key to achieving a beautifully crispy and golden-brown exterior when pan-frying.

Heat a generous amount of cooking oil in a skillet over medium-low heat. Carefully place the egg-coated mushroom slices in the skillet, arranging them in a single layer. Cook until the bottom side is golden brown and crisp. Flip the mushrooms and cook the other side until equally golden. Once the mushrooms are partially cooked, sprinkle the finely chopped green onions over the top and continue to cook for another minute or so. The aroma of the green onions will beautifully complement the mushrooms.
