Pan-Seared Chicken Tenderloins with Scallion Oil

Enjoy a healthy and flavorful meal with these tender chicken tenderloins, expertly seared in fragrant scallion oil. Unlike the often dry chicken breast, tenderloins offer a wonderfully moist texture. This recipe is perfect for a nutritious snack or a satisfying meal.
Ingredients- 6 chicken tenderloins (defrosted)
- 1/2 large scallion (green onion)
- 1 Tbsp water
- A little canola oil (or vegetable oil)
- A pinch of salt
Cooking Instructions
Step 1
First, thaw the frozen chicken tenderloins by placing them in the refrigerator. Allowing them to thaw overnight in the fridge ensures they remain moist.
Step 2
Lightly season the thawed chicken tenderloins with a pinch of salt. Be mindful not to over-salt, as you can always add more later if needed.
Step 3
Prepare the scallion by washing it thoroughly. Cut the 1/2 large scallion into approximately 6cm lengths, then slice each piece in half lengthwise. This helps to release more of its aromatic flavor.
Step 4
Heat a pan over low heat and add a small amount of canola oil. Once the oil is warm, add the prepared scallions and gently sauté until they become fragrant and slightly golden, being careful not to burn them.
Step 5
When the scallions are nicely browned and their aroma intensifies, place the seasoned chicken tenderloins in the pan. Sear them over medium-low heat until they develop a nice golden color on both sides. This helps to seal in the juices.
Step 6
Once the chicken is partially cooked, carefully pour 1 tablespoon of water around the edges of the pan. Immediately cover the pan with a lid and continue to cook on low heat for about 5-7 minutes. Steaming them with the lid on ensures the chicken stays tender and juicy all the way through.
