Step 1
First, prepare 1kg of fresh Korean pumpkin sweet potatoes. Wash them thoroughly and pat them dry. Line the bottom of a non-stick frying pan or a pot with parchment paper. Arrange the washed sweet potatoes on the parchment paper, making sure they don’t overlap too much. Using sweet potatoes of similar sizes will help them cook more evenly.
Step 2
Now, set the heat to medium-low. Cooking over high heat can burn the outside before the inside is cooked. It’s important to cook them slowly over gentle heat. Cover the frying pan with a lid to ensure the heat circulates evenly around the sweet potatoes. Let them roast for about 10 minutes.
Step 3
After 10 minutes, carefully lift the lid and gently flip the sweet potatoes. This step is crucial for ensuring both sides are cooked evenly. They won’t be fully cooked inside yet.
Step 4
After flipping, cover the pan again and continue to cook for another 10 minutes. Repeat this process of flipping and covering about 3 to 4 times. In total, this will take about 30 to 40 minutes of cooking, with flipping every 10 minutes. This patient roasting will allow the sweet potatoes to become moist and sweet all the way through.

To check if the sweet potatoes are done, simply insert a chopstick or skewer into the thickest part of a sweet potato. If it slides in smoothly and easily, it means they are perfectly cooked inside. If it feels stiff, continue roasting for a little longer.

Once you’ve confirmed they are tender when pierced, turn off the heat. However, don’t remove them immediately. Keep the lid on and let them steam for an additional 2 to 3 minutes using the residual heat. This steaming process further enhances the sweetness and flavor of the sweet potatoes.
