  • 300g firm tofu (recommended for pan-frying)
  • 1 egg
  • 1 stalk scallion (green onion)
  • 1 handful of mixed sprouts
  • Appropriate amount of flour (for dusting)

Mustard Sauce

  • 1 Tbsp soy sauce
  • 1 Tbsp sugar
  • 1 Tbsp vinegar
  • 1 Tbsp oligosaccharide (or corn syrup)
  • 1/3 Tbsp prepared mustard (or mustard seeds)
  • 1/3 Tbsp red pepper flakes
  • 1 pinch of salt

Cooking Instructions

First, gently press the tofu with paper towels to remove excess water. Then, cut the tofu into bite-sized pieces, approximately 1.5cm thick squares.

Crack the egg into a bowl. Add a pinch of salt and whisk gently until smooth. This will help the egg batter coat the tofu evenly.

Rinse the mixed sprouts under cold running water and drain them thoroughly. Ensure no excess water remains to keep them crisp and fresh.

Finely chop the scallion, including both the white and green parts. These will add a fragrant touch when placed on top of the tofu while frying.

Lightly pat the cut tofu pieces dry again. Dust each side thinly and evenly with flour. This step helps the egg batter adhere better and results in a crispier finish.

Dip the floured tofu pieces into the prepared egg wash, ensuring they are fully coated. Heat a frying pan over medium heat and add a generous amount of cooking oil. Carefully place the egg-coated tofu pieces into the hot oil. Place a small amount of chopped scallion on top of each tofu piece, then spoon a little more egg batter over the scallions. This helps the scallions stick and creates a nice presentation.

Pan-fry the tofu on each side for about 3-4 minutes, or until both sides are golden brown and crispy. Cook over medium-low heat to ensure the tofu is heated through without burning.

In a small bowl, combine 1 Tbsp soy sauce, 1 Tbsp sugar, 1 Tbsp vinegar, 1 Tbsp oligosaccharide, 1/3 Tbsp prepared mustard, 1/3 Tbsp red pepper flakes, and 1 pinch of salt. Whisk everything together until well combined to create the zesty mustard sauce. You can add the remaining chopped scallions to the sauce for extra flavor. Adjust the amount of vinegar and sugar to your preference for a sweeter or more tangy taste.
